Abstract: This article explores the concept of “green cuisine” in the context of community-based tourism development in the mountainous areas of Da Nang city, where ethnic minorities (Co-tu, Co, Xo-Dang,...) still preserve traditional practices closely connected to the forest and mountain environment. Green cuisine is reflected in clean ingredients (red upland rice, wild vegetables, free-range chicken, local pork, stream fish, bamboo shoots, mushrooms,…), chemical-free farming methods, eco-friendly processing techniques (bamboo tube rice, Zira soup, smoked meat, Ta Vac wine), and the use of biodegradable natural materials (wild banana leaves, bamboo/reed tubes, gourd shells, dong leaves) for packaging, wrapping and serving food. These practices not only preserve ethnic knowledge and ecological balance but also create unique experiences for community tourism, contributing to the development of sustainable livelihoods. The author emphasizes the need to avoid excessive commercialization in order to preserve cultural and ecological values, at the same time proposing the conservation of local plant species and the central role of the community in developing green tourism.

(DTTG) - Abstract: Developing ethnic minority and mountainous regions by leveraging human resources and local knowledge is a key approach to harnessing internal strengths and fostering sustainable development amidst current trends of integration and digital transformation. Human resources encompass not only educational attainment, vocational skills and innovative capacity but also the ability to inherit, preserve, and promote local knowledge values ​​accumulated over generations. This research analyzes the role and current state of leveraging human resources and local knowledge in the socio-economic development of ethnic minority and mountainous areas. Based on an assessment of the opportunities and challenges involved, the author proposes solutions to enhance human resource quality, preserve and digitize local knowledge, and effectively integrate traditional knowledge with modern science and technology. These measures serve as a crucial foundation for leveraging endogenous resources, preserving cultural identity and fostering sustainable development in ethnic minority and mountainous areas during this new phase.

(DTTG) - Abstract: The local knowledge of ethnic minority communities in the northern mountainous areas is a particularly valuable cultural and social resource, formed through a long process of adaptation to specific ecological and environmental conditions. This article analyzes the structure, function and operating mechanisms of local knowledge in fields such as resource management, agricultural practices, biodiversity conservation, community organization and social relationship regulation. Based on this, the research analyzes the role of local knowledge in sustainable development, while also highlighting the challenges posed in the context of modernization, climate change and economic integration. At the same time, the article proposes directions and solutions to effectively integrate local knowledge into regional development strategies, ensuring harmony between growth, welfare and preservation of cultural identity.
